4 Healthy Dinner Recipes for a Chef to Lose Weight

Tuna Tartare

Serving Size: 4
Full time: 5 minutes
Pro tip: Use fresh, high quality tuna

Ingredients

  • 1 pound sushi grade tuna
  • 4 avocados (1 per serving)
  • Garnish with 1 tablespoon rice pearls or sesame seeds
  • Garnish with 1/2 tsp, finely chopped scallions or shivas
  • To garnish, add 1/2 radish sprouts or microgreens

Sauce Ingredients

  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon Easter sauce
  • 1 tablespoon tubanjin (Japanese spicy bean paste)
  • 1 piece of sugar
  • 1/2 clove garlic, minced

Instructions

  1. Combine all the ingredients of the sauce in a mixing bowl and stir until the sugar dissolves.
  2. Use a sharp knife, dice tuna and avocado in 1-2 inch cubes. Place the diced tuna (approximately 4 oz. Per serving) in a bowl and top with the diced avocado (1 serving per serving).
  3. Gently pour 1 to 2 tablespoons of tartar sauce over the tuna and avocado.
  4. To garnish, sprinkle with rice pearls (or sesame seeds), finely chopped scallions (or chives), and radish sprouts (or microgreens).

1. Chicken Robata

Serving Size: 2 (4 skewers)
Full time: 20 minutes
Cooking time: 10 minutes
Special kitchen equipment is required: Grill and wooden skewers (previously soaked in water first to avoid burning)
Pro tip: Season the chicken to keep it nice and soft.
Protein substitutes: Chicken breast, cubed

Ingredients

  • 1 cup water
  • 1-4 cups salt
  • 8 chicken wing flaps (two-boned arm inside)
  • 8 bamboo skewers
  • 1⁄2 cup or citrus sauce *
  • Salt and pepper, to taste
  • To garnish, add 1/2 finely chopped scallions

Yaketiri sauce ingredients

  • 2 tablespoons vegetable oil (or any cooking oil in place of strong smoke)
  • 3-4 cups soy sauce
  • 2 good
  • 1 teaspoon ginger, chopped
  • 2 cloves of garlic, whole
  • For 1-2 cups
  • 1-2 cups die
  • 1-4 cups sugar

Instructions

For yaketiri sauce:

  1. In a medium-sized pan, heat the oil, then add the chilli, ginger and garlic. Cook until brown, about 5-6 minutes.

Instructions
