The children have breakfast. I make sure they have a full and nutritious breakfast every morning and I don’t recommend having breakfast near meals. However, they will need to have breakfast from time to time when they are playing outside and burning energy or progressing fast.
These chocolate coconut energy bars fit perfectly on the bill. It’s tasty, full of fiber and healthy fats, and they’re quick and easy to make.
3 types of fitness mama energy bars
I like the convenience of energy bars, but I don’t like store-bought ingredients. So, of course, I made my own version.
My first and one of my favorite creations is the energy bar of my well-being. The ingredients are simple: chopped nuts, pure dates and raisins for sweetness and to tie the whole thing together, and cinnamon. It’s easy, tasty, nutritious and portable.
Next, I made Chia Seed Energy Bar. I like to use chia seeds because of their great nutritional properties. It is full of fiber, antioxidants, calcium, omega 3s, and promotes a tremendous energy. Read more about them in this post
Finally, I created the star of this post. Chocolate Coconut Energy Bar. I wanted a recipe that was mostly coconut based and nut free. And there was a request from the children; chocolate!
Chocolate Coconut Energy Bar
These bars are found really quickly with minimal traffic. I use a mixture of cocoa butter and cocoa powder to make chocolate blends.
Don’t be afraid if you are not familiar with cocoa butter! Both cocoa butter and powder come from cocoa beans and are used to make chocolate. Cocoa butter is cocoa seed fat and comes in a block or sometimes thin wafer (which is easy to use). I buy mine here on Amazon.
If you don’t have cocoa butter and you don’t want to be bothered by it, you can use extra coconut oil. The bars won’t be that rich, but they’ll still be delicious.
An important note on these energy bars: Unlike my fitness energy bars, they are not usable. The melting of cocoa butter and coconut oil means that they have to be kept cool to maintain their shape. After they cooled down, I cut them into bars and put them in the fridge.

Chocolate Coconut Energy Bars Guide
An easy, healthy, grain-free energy bar made with chocolate, coconut, and honey for an energy-boosting breakfast.
Apply a 9×13 baking dish with parchment paper.
Melt coconut oil and cocoa butter in a small pan over low heat.
Add honey and stir well.
Whisper in cocoa powder, chopped coconut and chia seeds.
Add vanilla and stevia textures if used.
Pour the mixture into the prepared baking dish and refrigerate for 1 hour or until hardened (you can also freeze it to speed up the process).
Cut into bars and enjoy!
