When I was growing up, Tater Tot was a very good behavior. (I confess, I loved them.)

Zachary grinding in these dumplings mimics the texture of a tater tots and is a great way to shape an old favorite in a healthy way. Zachary provided them with a nutritious boost that does not contain tartar tots, and if you fry them in a little coconut oil or olive oil on the stove, they are also good!

How to make Zachary Fritters

Zachary fritters are very easy to make. The most important step is to squeeze the chopped zucchini water before mixing it with all the other ingredients. I sprinkle it with salt and let it sit for a few minutes then put it in a cheesecloth or reusable product bag and squeeze.

After that, I just mix in the rest of the ingredients and choose the way to cook. Sometimes I bake them in muffin tins in the oven and other times I make them into patties and fry them in a little coconut oil or butter on the stove. They are more portable in muffin tones, but slightly fried on a crustier stove.

These fritters heat up really well (especially the muffin tones) and are topped with a simple egg for breakfast!

Also, I haven’t tried it, but I bet they’ll work really well in a cast iron pie iron at campfire. (Or just to control the fire.)

Recipe for Easy Zachani Fritters

These easy zucchini fritters make it easy and are a great alternative to hash browns and tartar totes with an extra nutritious addition!

Instructions

  • Preheat oven to 400 F

  • Grease a baking sheet or muffin.

  • Grind the zucchini with a box grater or food processor.

  • Add salt to remove excess liquid and squeeze very tightly with a towel.

  • Put in a medium sized bowl.

  • Put the onion in the pumpkin and bowl.

  • Add eggs, persimmon cheese, almond flour, and spices and mix until smooth.

  • Add a tablespoon of the mixture or muffin tins to the baking sheet.

  • Bake for about 18-20 minutes or until top and sides turn brown.

  • Serve alone or at home with ketchup. Crustaceans can also be fried in coconut oil for an outer coating.

  • Enjoy!

Note

Make your own ketchup! Make 12 muffin-sized fritters or 24 tablespoon-sized fritters. Store in the fridge or freezer.
